I am doing fiorentino for a customer building a new home. She would like to know which would produce a better result. 1) Do the finish directly over the taped drywall. 2) Have a smooth plaster finish applied first. Any comments would be welcome.

If I had my way. Fiorentino is such a thin plaster I would ask a class 4 or 5 drywall surface. Otherwise chances are that you are going to see surface defects from the drywall.

I agree with Simon, a perfect tape job is not always executed. I like to see the surface built up when possible.
